

CAPRESE PASTA SALAD INGREDIENTS:
- 1 pound dry pasta (any shape will do)
- 1 pint cherry or grape tomatoes (I used a combination of red/yellow cherry tomatoes)
- 1 (8 oz) ball of fresh mozzarella, diced (or you can use the brick of cheese)
- 1/3 cup julienned or shredded fresh basil leaves
- 1 batch balsamic vinaigrette (see below)
BALSAMIC VINAIGRETTE INGREDIENTS:
- 1/3 cup extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly-cracked black pepper
- pinch of Italian seasonings

Vanilla Pineapple Popsicles 1 lb fresh peeled, cubed pineapple (about 4 cups) 1/2 teaspoon vanilla bean paste 1 pinch sea salt ___ Add all ingredients to food processor and process until smooth, scraping down the sides …super yumfulness!!!
